Slow broil or roasting, either way will be fine. Rub a bit of sea salt in it, sprinkle a few whole fennel seeds on it, wrap it in tin foil and slow roast for 150*C for a couple hours. Serve with roast taters cooked in goose fat and your choice of veg. Mmmm, mmm, mmmmm! Don't forget some gravy! :-)
